Polo Match Picnic

INGREDIENTS
3/4 cup dark chocolate chips
1 tsp. vanilla extract
2 to 3 Tbsp. butter, room temperature
8 Tbsp. sugar, divided, plus more for the ramekins
3 egg yolks
1/3 cup milk, room temperature
2 Tbsp. all-purpose flour
2 Tbsp. cocoa powder
5 egg whites
Pinch of salt

DIRECTIONS

Preheat oven to 425°F and grease 4 ramekins with butter.  Dust the interiors with sugar.

Add chocolate and vanilla to a double-boiler over medium low heat. Stir until fully melted. Remove and cool.

In a second bowl, add the egg yolks and 4 Tbsp. of sugar. Place over the double-boiler and whisk continuously until pale yellow and slightly thickened, about 1 minute. Add milk, flour, and cocoa powder, and continue to whisk until thick, about 5 minutes. Remove from heat and add melted chocolate.

In a third bowl, with a hand or stand mixer, whisk egg whites, salt and remaining sugar, until stiff peaks form.

 Gently fold the whites into the chocolate and fill the ramekins. Place in the oven and reduce temperature to 375°F.  Bake for 15 to 17 minutes.
