Chicken Salad Tea Sandwiches
INGREDIENTS
1 rotisserie chicken (recommended for ease!) or 4 chicken breasts
1 bunch green onions
5–6 stalks celery
2 large dollops of mayonnaise(around 4–6 tbsp)
Optional: chopped red onions, chopped grapes, raisins etc.
1 loaf bread of choice
DIRECTIONS
If cooking your own chicken breasts, bake at 350 degrees for 25 minutes. Shred chicken finely. Finely chop green onions, both the white and green parts. Finely chop celery and sprinkle generously with salt. Let sit for about two minutes.
Mix everything in a bowl. Add salt & pepper to taste. Add additional celery for extra crunch, more mayonnaise for a creamier texture, or any extra ingredients based on your preferences!
Spread a couple of spoonfuls of chicken salad on bread of your choice. Slice off the crust and cut bread into triangles. Place on a platter of your choice and serve.
