Ingredients
A splash of water as needed
400g durum flour (or 00 flour)
Pinch of salt
2 whole eggs plus 2 egg yolks
Instructions
1. Pour the flour on the table and sprinkle a pinch of salt over the flour. Create a well in the middle of the flour and add the whole eggs and egg yolks. Whisk the eggs in the well with a fork and then start to pull the flour from the outside to the center. Continue to incorporate the eggs and flour until dough is formed adding splashes of water if needed to help form the dough to a play-dough like consistency. Knead the dough for about 10 minutes, it should feel smooth to the touch and hold together nicely. Cover with plastic wrap and let sit for 30 minutes at room temperature on the counter.
2. Cut the dough into 8 equal parts with a pastry cutter and run the dough through the pasta maker starting thick and moving to thinner settings (as instructed by your specific brand of pasta maker) Use a pizza cutter or pasta blade/cutter to cut into pasta strands. I like to make mine about 3/4-1inch in thickness.
3. Boil water and add some salt, once the water comes to a rolling boil, add fresh pasta and cook for about 3-4 minutes. Strain pasta and toss in a little olive oil so it doesn’t stick! Add your favorite sauce :) I love Pasta Grannies ragu recipe or simply cooking organic grass fed beef with a jar of RAO’s sensitive stomach marinara and topping with copious amount a of fresh shaved parmesan and fresh grated nutmeg!
