Pumpkin Muffins

Serves:24 muffins
Ingredients:
• 4 eggs
• 2 cups sugar
• 1 can (15 oz) solid packed pumpkin
• 1 ½ cups vegetable oil
• 3 cups all purpose flour
• 2 tsp baking soda
• 2 tsp baking powder
• 1 tsp ground cinnamon
• 1 tsp salt
• 2 cups (12 oz) chocolate chips
Directions: In a large mixing bowl, beat eggs, sugar, pumpkin and oil until smooth. Combine flour, baking soda, baking powder, cinnamon and salt and mix well. Fold in chocolate chips.Fill greased or paper lined muffin cups three-fourths full. Bake at 400 degrees for 16-20 minutes or until toothpick comes out clean. Cool in pan before removing to wire rack. Yield: 24 muffins
